Makes: 2 main dish servings
3 Tbs extra virgin olive oil
4 scallions, chopped
2 cloves garlic, chopped
1 cup broccoli, chopped
1 cup carrots, chopped
1 cup sliced celery
1 cup cooked brown rice
½ tsp extra virgin olive oil
1 egg, lightly beaten
2 Tbs almonds or walnuts, chopped
2 Tbs apricots or blueberries
1. Heat 2 Tbs of oil in large fry pan over medium-high heat for about 2 min.
2. Add scallions, garlic, broccoli, carrots, and celery and stirfry for about 3 min.
3. Add 1 Tbs of oil, rice, and stirfry for min. Remove rice and vegetables from fry pan.
4. Add ½ tsp of oil to fry pan and heat for 30 seconds.
5. Pour egg into fry pan. Cook for 1 min, turn, and cook for 1 min, or until set.
6. Remove the egg and slice into thin strips.
7. Top rice with egg strips, and add chopped nuts and fruit.
8. Serve immediately.
